This exquisite Iberico ham is produced by Manuel Maldonado of Extremadura, mid-west Spain. His pure-bred Iberian pigs have 2-3 hectares each to roam and are raised on a diet rich in acorns. This painstaking cultivation, as well as hand slicing, gives the ham a rich, complex flavour and a melt-in-the-mouth texture.
