Traditional Iberian Ham
Located in the heart of Andalusia’s Los Pedroches Valley, Hidalgo Los Pedroches produce exceptional Iberian ham using traditional methods passed down through generations. The family-run business is committed to sustainable farming and preserving the unique biodiversity of the region.
Their pigs are born and raised within the Dehesa, a protected oak woodland where the animals roam freely during montanera - the final fattening season. Here, they feed exclusively on acorns, grass, and natural vegetation, giving the ham its signature sweet, nutty flavour.
Each ham is cured by hand for up to 48 months in natural drying cellars, where the unique microclimate of Los Pedroches enhances its delicate texture and rich aromas.
