Created using our Blanc de Blancs Champagne, produced by Laurent Hostomme from his own vineyards located within the Grand Cru region of Chouilly, our Champagne Popsicles are a grown-up frozen treat for summer.

Our Champagne Popsicles make the perfect treat for a hot summer's day. Due to popular demand, our Champagne Popsicles are currently only available at The Shard, as part of our Sky High Tea experience. If you can't make it to our store, why not purchase our fine Blanc de Blancs Champagne and make your own popsicles at home with our recipe below.

You only need three ingredients to make Champagne Popsicles at home – 400ml of Blanc de Blancs Champagne, 65ml of water and 65g sugar. You will also need cups to freeze the Champagne mixture in.

How to make Champagne Popsicles:

Start by melting the sugar in the water on a low heat.

Reduce the heat and allow to simmer for 5 minutes while continuing to whisk the liquid, until it turns into a syrup. This happens very fast, so don’t leave it longer than 5 minutes on simmer. Set the mixture aside to cool down.

Add the Champagne to the syrup and whisk it all together.

Pour the liquid into cups and place in the freezer overnight.
