To celebrate the launch of our new Biscuitorium, our tea and biscuit teams at Piccadilly have been conducting hour after hour of high octane, crumb-fuelled experiments, all with one simple aim: to find the perfect cuppa (or in one special case, the perfect bottles) to enjoy with a selection of iconic Fortnum’s biscuits.

Chocolossus & Breakfast Blend
A mighty favourite made with 63% dark chocolate and mellow, crunchy macadamia nuts, our dark and decadent Chocolossus is a chocolatey, nutty and scrumptiously crumbly favourite that pairs wonderfully with our full-bodied and malty Breakfast Blend – an iconic brew made with tea leaves from the steamy Brahmaputra Valley in Northeast India.

Knickerbocker Glory Biscuit & Green Tea with Lemon
Inspired by the famed ice cream sundae that’s been served at Fortnum’s ever since the 1950s, our sweet and luxurious Knickerbocker Glory Biscuit is generously nibbed with real raspberry and pineapple pieces and covered in exceptional white chocolate – making it a perfect companion to the earthy flavours and bright, zesty notes of our Green Tea with Lemon.

For the perfect dunking experience, break or bite the Knickerbocker Glory biscuit first, then submerge it into your cuppa for 1 second.
Toffolossus & Assam TGFOP
A teatime icon laden with chewy toffee pieces, plump dates, and finished with a colossally indulgent chocolate coating, this salty-sweet sibling to our original Chocolossus is a magnificent partner to our Assam TGFOP: an historic tea variety that comes to Fortnum’s from the heart of India's steamy Brahmaputra Valley. Made with the delicate leaf tips of the Assam tea bush, its full-bodied and robust character makes it an ideal companion to our Toffolossus.

Lucifer's Biscuit & Jasmine Pearls
Made with candied stem ginger and a dash of jalapeno – yes, really – these addictive treats promise both a moreish hit of sweetness and a lovely, slow-building kick. But what to sip with it? Previously available only from the Rare Tea Counter at our Piccadilly store, our hand-rolled Jasmine Pearl Tea is scented with whole, hand-picked Jasmine flowers, which are harvested when the flower’s aroma hits its eveningtime peak. Delicate and fragrant, it’s the perfect counterpoint to the robust spiciness of our Lucifer’s Biscuits.

Dark Chocolate Florentines & Black Tea with Fig
First introduced to Fortnum's in the 1950s, our Dark Chocolate Florentines are made in small batches by our biscuit geniuses in the UK. Perfect as an after-dinner treat or afternoon snack, these chewy masterpieces marry rich dark chocolate with crystallised ginger and flaked hazelnuts – which pair perfectly with the warming, malty notes and subtle, honeyed notes of real fruit in our Black Tea with Fig.
How to dunk it
In a word, don’t. Due to their chewy texture, our experts suggest taking a bite and allowing the flavours of this Florentine to unfurl alone, before sipping your tea as a refreshing chaser. Delicious!
Traditional Shortbread Rounds & Countess Grey
Made in Edinburgh by a family-run bakery using exceptional ingredients – including butter from happy cows who spend an average of 240 days in pasture – our hand-stamped Shortbread Rounds are the ideal companion to our Countess Grey. A fresh twist on the traditional bergamot-infused Earl Grey, the Countess’ well-twisted orange pekoe leaves and light orange flavour partner perfectly with the rich, buttery deliciousness of these timeless teatime treats.

Lemon Curd Biscuit & Darjeeling FTGFOP
Baked with organic flour from Shipton Mill — and the world's first carbon neutral butter, from a family dairy in the West Country — these citrusy morsels are made with real lemon curd. Buttery and zesty in equal measure, they perfectly complement the subtle Muscatel flavour of our highly-prized (not to mention high-grown) Darjeeling FTGFOP, which hails from a garden in the foothills of the Himalayas.

Pistachio & Clotted Cream Biscuits & Jade Oolong
A true Fortnum's icon both for its irresistible flavour and for the charming monkey on its tall tin, our Pistachio & Clotted Cream Biscuits are made with real English clotted cream and nibbed with subtly savoury pistachio pieces. Buttery and deliciously textured, they’re particularly well-suited to our Jade Oolong: a delicate, highly-prized and patiently hand-rolled tea whose fresh green-floral aromas and subtly sweet flavours unfurl slowly, as the tea infuses.

Pistachio & Raspberry Whoppalossus & Long Jing
Weighing in at 400g, our biggest biscuit ever, the Pistachio & Raspberry Whoppalossus, combines a rich dark chocolate shell with crumbly oat biscuit, jammy raspberry marshmallow and silky Sicilian pistachio paste. Decadent and bold, our experts have picked a special tea to sip alongside it: Long Jing, a pan-fired creation rich with savoury flavours and a wonderful toasted character. Named after the village where it was first created, it’s a showstopping cup for an equally impressive biscuit.
How to dunk it
Our experts actually don’t recommend dunking this biscuit directly into your cup, but don’t fret: instead, they suggest savouring a solo bite of this whopping teatime treat, then sipping your cup a second or two later.
Cherry & Almond Gluten-Free & Vegan Biscuits & Rose Pouchong
Biscuity twists on the ever-popular Bakewell Tart, these gluten-free and vegan-friendly treats promise intense frangipane aromas and plentiful pieces of chewy glace cherry – which make them the perfect accompaniments to a cup or two of our Rose Pouchong. A characteristically floral and elegant black tea interleaved with rose petals, it’s a brew which looks a picture and tastes beautiful, too.

Stopwatches at the ready! Our dunking tests have revealed a surprising (not to mention surprisingly precise) answer to the question above: when it’s time to submerge these delicious things, 0.1 seconds (yes, that's one-tenth of a second) is all your Cherry & Almond Biscuit needs. Anything more and you’re asking for trouble…
Heather Honey Biscuits & Victoria Grey
A bergamot-based tea blend – created in homage to the monarch who helped transform Britain into a united nation of tea lovers, Queen Victoria – our Victoria Grey Tea is a delicate black tea made with liquorice root, lavender, cornflower petals, and our very own Fortnum’s Salisbury Plain Honey. Zesty and subtly floral, it’s a perfect cup to plunge a crisp, sweet-meets-salty Heather Honey Biscuits.
How to dunk it
Patience is required with these ever-so-devourable creations, but the wait is always worth it. Break or bite your biscuit, then submerge it for as much as 12 seconds. (Yes, twelve.)

Biscuits Roses de Reims & Blanc de Blancs Champagne
Biscuits and…Champagne? Oui. Biscuits Roses de Reims were among the first treats ever sold at Fortnum’s and these exceptional new creations continue that delicious story. Crafted to a 330-year-old recipe, they're light, crisp, subtly sweet, and absolutely intended to be enjoyed with (and dunked into) something sparkling. Our advice? The light floral notes and quenching acidity of our Blanc de Blancs Champagne – crafted exclusively for Fortnum’s by the Hostomme family in Chouilly – make it the perfect companion. So, anyone for an aperitif?
How to dunk it
It might seem a little unusual, but don’t be deterred by foolish convention: instead, gently dunk your biscuit into your bubbles for 1.5 seconds, then enjoy.
