Glenarm Shorthorn Beef is exclusive to Fortnum & Mason. It is hand-selected from the Glenarm Estates Shorthorn herd and dry aged on the bone for a minimum of 28 Days in Europe’s first Himalayan Salt Chamber. This dry ageing or ‘Salt Ageing’ process is totally unique to our producer and consists of a series of 3 Himalayan Salt Chambers containing a total of 26t of Himalayan Salt Bricks.

What is Himalayan Salt Aged Beef? Some misunderstand the terminology of ‘Salt Aged Beef’ thinking that salt is added or rubbed on the beef, which is not the case. The Himalayan Salt is part of a 7-stage technique to create the perfect environment to mature the beef, allowing it to reach its optimum potential. This process concentrates the taste and produces a sweet, tender, and intensely flavoursome piece of beef.

This first-class rib-eye steak is cut from the beef fore rib and has a beautiful distribution of internal fat and marbling. It is ‘Salt Aged’ on the bone ensuring an utterly delicious taste and texture before being de-boned, cut into steaks and trimmed.

The steak is a Three Gold Star Winner at the Guild of Fine Foods Great Taste Awards and a Gold Medal Winner at The World Steak Challenge.

Your meat will arrive vacuum packed. Please remove the meat from its packaging, pat dry and leave to rest for 24 hours in a refrigerator before you plan to cook it. This allows the flavour to mellow and ensures your meat is as delicious as it was intended to be every time.

Our Salt Aged Glenarm Shorthorn Beef is a fresh product and naturally has a shorter shelf life. We recommend you consume this product shortly after receipt, as we can only guarantee a minimum shelf life of 3 days upon delivery of your order.
