This tremendous cheese is sourced from the West Country, where the cows roam freely over hilly green pastures. Allowed to mature for 12 months, this excellent cheddar is mature yet moist, with tangy, caramel notes. Delicious with pickles and crackers, it is also works well in a soufflé or in a tart.
