Made in-house by our expert chefs, this venison loin is roasted to tender perfection, wrapped in haggis and layered with a crispy, buttery puff pastry. A real centrepiece, this Venison Wellington is superb for a Burns Night celebration.
Serves 4.
Cooking Instructions:
This Venison & Haggis Wellington will arrive partially defrosted so it will need to be put into the fridge overnight to defrost. Before cooking, please check that the product has fully defrosted by inserting a skewer into the centre of the fillet. If there is no resistance then it is fine to cook.
1. Remove the fully-defrosted Wellington from the fridge 45 minutes before cooking.
2. Preheat oven to 175°C/Gas Mark 4.
3. Lightly grease a baking or roasting tray, place the Wellington in the centre of the tray and brush the pastry with beaten egg.
4. Cook in the centre of the oven for 20 to 25 minutes or until the pastry has turned golden brown.
Turn the tray half way through cooking to ensure even cooking.
5. Allow to stand and rest for at least 15 minutes before slicing and serving.
6. We recommend seasoning each slice of Wellington with a sprinkle of salt before serving.
Keep refrigerated and consume within 48 hours of receipt.
