France takes its cheese-making particularly seriously, and this fine cheese board is a true credit to the fromager’s art. The unique Valencay, shaped like a pyramid with the top cut off – allegedly by Napoleon’s sword – is nutty and fresh with a dusting of salted charcoal. The fine Brie de Meaux is a superb incarnation of this king of cheeses, the Gruyere Du Jura Suisse has a superb caramel taste and silky texture and the Persille du Beaujolais is luscious, dense and mellow, an ideal accompaniment to a dessert wine.
