Highgrove Organic Mâcon-Davayé, 75cl

Crafted by brothers Richard and Stéphane Martin from organically farmed old-vine Chardonnay in the heart of southern Burgundy, this is Mâconnais at its most expressive. The fruit is sourced from eight separate plots in Davayé, with an average vine age of 40 years, giving the wine real depth and character. A long, cool fermentation and extended lees ageing in stainless steel bring a creamy, rounded texture while preserving the purity of the fruit. The result is an elegant, unoaked Chardonnay with soft notes of melon, crisp apple, and a gentle acacia honey finish. Beautifully balanced and quietly complex, it’s a natural partner for goat’s cheese, salmon, roast chicken or delicate fish dishes with a buttery sauce.
