The Appleby’s have been making this Cheshire Cheese at Hawkstone Abbey Farm, near Whitchurch in Shropshire, for three generations, and they are now the last farm making cheese using their own raw milk. It has a delicate balance of rich, mineral flavours, juicy acidity, and a sumptuous yet crumbly texture. Pair with Fortnum’s Hot Banana Pickle, along with a glass of Fortnum’s Pauillac, Chateau Lacoste Borie.
