Ireland’s Cashel Blue offers a creamy, mildly tangy character from grass-fed milk, while Swiss Stärnächäs delights with sweet nuttiness after eight months of ageing. Completing the quartet is Sainte-Maure de Touraine, a French goat’s cheese with its signature ash rind and central straw, produced in the Loire Valley since the 9th century.
