La Galaxia Rosé is the fruit of a collaboration between Portuguese winemaker Alvaro Castro and Spanish winemaker Eulogio Pomares. This pale rosé comes from the vines nestled in the Estrela mountains, part of the Portuguese region of Dão. The grapes used for the blend – native varietals Aflrocheiro, Jaen and Baga – are sourced from organic vines and range from 3 to 65 years in age. These are fermented in cool stainless steel tanks to preserve their freshness, and the wine spends a few weeks in the tank before it’s bottled – without undergoing any fining or filtering. This leads to a fresh and zesty taste with citrusy and floral notes, as well as a salty finish. It will pair perfectly with seafood dishes, especially tuna and salmon.
