Gaia Estate is one of the pioneers of the Modern Greek wine revolution. The vineyard is located in Santorini which has a unique terroir with roots that date back 3,000 years and the vines are trained on the traditional basket shaped systems called "kouloura". The long sunshine hours, lack of rainfall, sea mists and strong summer winds all contribute to the unique microclimate.

The handpicked grapes are cold soaked for 12 hours then the free run juice is collected for fermentation using only natural wild yeasts with 50% in stainless steel tanks, 35% in new oak casks and 15% in acacia casks. This is Aegean Puligny! The palate is salty dry with laser-beam precision and very funky wild ferment layering of complexity, with oak wreathed minerality and gun flint character.

Classic pairings of seafood, olives, and salty cheeses are perfect, but also a Greek Salad with feta cheese. However, this incredibly versatile wine is great with seafood, meatier fish dishes, lamb and poultry.
