Rivesaltes 1971, Domaine Casenobe, 75cl

With a very intense bouquet and notes of walnuts, aniseed, light floral aromas and hints of marmalade, nutmeg and white pepper on the palate, Rivesaltes is an historic appellation in the eastern Rouissillon.

Made from mainly Grenache grapes, the production process, known as mutage, is similar to the one for fortified wines, during the fermentation Rivesaltes is fortified with a neutral grape spirit resulting in a portion of the sugar contained must is not converted to alcohol, giving a delicious balanced sweet taste. It pairs wonderfully with dark chocolate, chocolate desserts, nut tarts and blue cheeses.
