Perfect Cheese Pairings - Part Four
Our Perfect Cheese Pairings: Part Four
"As we fold out from underneath winter’s cold, dark blanket, we gleefully roll into the longer, lighter days of Spring, rejoice in its sweet smells of hawthorn blossom and fresh grass, and bathe in its new colour and melodious birdsong" muses Angus D. Birditt, expert in all things cheese, food writer, poet and photographer, who joins us once more with a selection of expertly paired (and absolutely delicious) cheeses.
"Springtime is a chance to reset and refresh for the months ahead, and for many of our dairy farmers across the UK, it’s time to ‘turn out’ their animals. This is the chance for the farmers to fling open the barn doors and gates to allow their herds and flocks to graze the new pastures. It’s also a time for lambing and calving, so be sure to see plenty of jumping lambs and dainty calves on your travels out into the countryside.
The following pairings are a perfect excuse to crown these new, seasonal feelings and impress your friends and family with a fine selection of Fortnum’s house cheeses, crackers and condiments."

Cheddar Waxed Truckle, Fig and Fennel Chutney, Cheese Sables
If you are looking for the ultimate cheesy-savoury combination to enjoy this year, look no further than this pairing of Fortnum’s Cheddar Waxed Truckle, Cheese Sables and their fantastically sweet, tacky Fig and Fennel Chutney. The Truckle will be sure to impress anyone who wishes to dine with you. Simply, crack open its top and spoon out the golden goodness within. My advice is to take the truckle out of the fridge and leave at room temperature for half an hour or more to soften up before devouring.
Stilton with Port, Honey & Sauternes, Beetroot Crackers
For those of you who are lovers of strong, savoury explosions, this pairing is the one for you. Take a generous scoop of Fortnum’s punchy Stilton with Port and spread it on their delicately sweet Beetroot Cracker. Then, if you’re feeling bold, glaze it lovingly with their sweet nectareous Honey & Sauternes condiment. Consume liberally and at will!

Goat's Cheese, Truffle Honey, Charcoal & Cumin Crackers
This flavour-packed pairing evokes fine images of late evenings and roaring log fires. The Charcoal & Cumin Crackers have a deep woody flavour to them, lifted by the fresh lactic notes of the Goat's Cheese, both of which are cut in two by the rich, heady flavours of the sweet Truffle Honey.
