Our Chablis is made by Domaine Louis Michel, under the guidance of Guillaume Michel, who seeks to produce Chablis in its purest form. Guillaume is a passionate traditionalist with the utmost respect of the terroir of his 25 hectare domaine. His wines receive no oak contact at all and remain on their lees for 8 months before bottling. Crisp green apple fruit with a bone dry flinty mineral backbone, our Chablis is the perfect aperitif and best served with our gently cured Smoked Salmon.
