Located halfway up the slope in the heart of the appellation, the Domaine’s vineyards benefit from southern exposure and enjoy optimum sunshine which results in wines with great power and complexity. The monks of Pontigny, who initially cultivated the vines in this remarkable location, unquestionably made a wise choice.

This wine matures for a minimum of 18 months, resting in stainless steel tanks with minimal handling throughout this period and undergoes a gentle single filtration before bottling. A wonderful white crafted without any additional yeast, instead relying on natural, indigenous yeasts for an extended fermentation process in vats under precise temperature control.

On the palate, you’ll discover mineral and chalk notes along with honey, green apples and citrus fruits. Pair this wine with pork, rich fish, shellfish and mild and soft cheeses.
