Fortnum’s Chablis, Domaine Louis Michel, 75cl

This leading estate, a Fortnum’s partner since 1992, is well known for a pure, flinty style of Chablis, which Guillaume Michel achieves by making his wines with exceptional care, from organic practice in the vineyard to hand-picking and sorting of the grapes and fermenting and ageing, on lees, in stainless steel. He believes that Chardonnay on his fossil-speckled, clay-limestone soils shows its fruit better when oak is avoided, and this wine, with its vibrant green-apple acidity, bears that out. The perfect aperitif wine, with a particular affinity for smoked salmon, it also pairs well with Torres Jamon Iberico Crisps.
