Fortnum’s Chablis, Louis Michel, 75cl

Louis Michel et Fils is a family domaine dating back to the 19th century with vineyards in the historic Chablis heartland. The estate is renowned for its unwavering commitment to classical, unoaked Chablis. Winemaking is in the hands of Guillaume Michel, who explains, "Everything is vinified the same way. The idea is to let the terroir talk instead of the winemaking”. He uses indigenous yeasts, and all the wines go through a natural malolactic fermentation. Old vines and careful parcel selection add depth and texture. The result is linear, saline, precise Chablis that clearly articulates a sense of place.
