NON3 Toasted Cinnamon & Yuzu, 0% ABV, 75cl

NON is a fresh, innovative take on wine, based in Melbourne, Australia - one of the world’s gastronomic capitals. Crafted from Barossa Valley Semillon grapes, NON is made from verjus (unripe juice) and infused with a blend of fruit, herbs, and subtle savoury notes. This creates a harmonious balance of floral, tannin, salinity, and acidity, all wrapped in minimalist packaging.

This is NON’s alternative to a still white wine. Extremely refreshing and gastronomic, a perfect drink to sip on in the garden or on the beach. The NON 3’s flavour profile is made out of oranges that were dehydrated for 48 hours and concentrated, creating a caramelised and candied taste. A 5-hour infusion of pith adds bitterness, while orange skin gives a waxy mouthfeel. Yuzu adds a sharp, citrus note, while cinnamon and orange skins provide tannin and spice.

NON-3 would pair well with warm entrees or mains such as Chicken or Monkfish. The lovely citrus flavours from the Yuzu cuts through the richness of each dish, resulting in a very moreish sensation.
