A white wine from the Maconnais region of southern Burgundy, made entirely from Chardonnay but without using any new oak, to preserve freshness and fruit character: 66% of the juice is vinified in stainless steel while the remainder goes into 500-litre barrels, none of them new. The result is a pretty wine that has none of the vanilla characteristics Chardonnay acquires with new oak. The wine has notes of almond, honey, peach and pear, and will go beautifully with seafood or poultry.
