Three Ways with Potatoes recipes


Elegant Rarebit Gratin
What you'll need
SERVES 6
1. 300ml whole milk
2. 250ml double cream
3. 2 garlic cloves, crushed
5. 1.2kg floury potatoes, such as Maris Piper Few sprigs of thyme
6. Salt and freshly ground black pepper
What to do
1. Preheat your oven to 160C/140C fan/Gas 4 and grease a medium ceramic baking dish, roughly 18x28cm and 6 or 7cm deep. Peel and slice the potatoes to a width of 3mm.
2. Place the milk, cream, garlic and Rarebit into a saucepan. Slowly warm to just below boiling point, stirring until smooth. Remove from the heat, check for seasoning, then cover to keep warm.
3. Layer half of the potatoes into the dish, slightly allowing them to overlap. Pour half the warm cream mixture over the potatoes, then sprinkle with some thyme and black pepper.
4. Finish off layering the rest of the potatoes. Pour over the remaining cream mixture, ensuring a small amount covers the top, then sprinkle with black pepper.
5. Bake for about 1hr and 10 minutes, until the potatoes are tender and the top is golden brown and bubbling. (If the top isn’t quite brown enough, place it under a hot grill for a few minutes).
6. Rest for 10 minutes then sprinkle with some thyme to serve.

Aged Cheddar Potato Croquettes
What you'll need
MAKES AROUND 15.
1. 650g cold leftover mashed potatoes
2. 2 egg yolks, plus 2 whole eggs
3. 100g Fortnum’s Cave Aged Cheddar, grated
4. 50g parmesan, grated
5. 50g butter, melted
6. 60g plain flour
7. 100g panko breadcrumbs
8. Olive oil, for drizzling
9. Fortnum’s Lemon & Oregano Mayonnaise
10. Small handful of chopped chives or oregano, to serve
11. Salt and freshly ground black pepper
What to do
1. Mix the mashed potatoes with the egg yolks (but not the whole eggs), cheeses and butter, then season very well. Shape the mixture into 14–16 croquettes.
2. Set out three shallow bowls with flour, beaten eggs, and breadcrumbs. Dip each croquette into the flour, then the egg, and finally the breadcrumbs. Arrange on a baking tray and place in the fridge for at least 30 minutes to chill.
3. Preheat your oven to 200C/180Cfan/Gas 6.Drizzle each croquette with olive oil and bake for 25-30 minutes, or until golden-brown. Serve hot alongside the mayonnaise and a sprinkling of sea salt and herbs.
