Not ones to accept the norm, our British Cassis is grown on the rolling fields of a Herefordshire family farm.
And why not? The French version can be a smidge too sweet for some, but in the micro-climate of the English-Welsh border, our succulent British blackcurrants make for a liqueur that is fresh and sharp, not unlike the weather responsible for them.
When freshly picked, the tiny currants are left to get to know each other while fermenting naturally with Champagne yeast. They are then blended with a good splash of vodka to fortify and bring out the rich, fruity flavour. Try adding it to some bubbles to create a very English twist on a classic Kir Royale. Santé.
