Fortnum's Kitchen Pistachio and Date Truffles Recipe


Truffles dressed to impress! Chocolate, dates and nuts are a perfect match, and these little bites make a lovely after-dinner treat.
If you’re not eating these straight away, don’t dust them just yet - once you’ve made them into balls, place in the fridge for up to three days and dust before serving.
What you'll need
MAKES 12
6 tsp Sweet Sicilian Pistachio Paste
1 tsp light olive oil or melted coconut oil
1 tsp cocoa powder, plus extra for dusting
6 Medjool dates, stones removed
Pinch of salt
Crush pistachios for serving
What to do
1. Using two spoons, place 12 x ½ tsp balls of Sweet Sicilian Pistachio Paste onto a small plate. Place in the freezer for a few hours or overnight.
2. In a small bowl, mix together the cocoa powder and oil and then add to a small food processor with the pitted dates and a pinch of salt. Blitz until a paste forms.
3. Place the extra cocoa powder and the crushed pistachios on two separate plates. Encase each ball of frozen Sweet Sicilian Pistachio Paste with the date mixture and dust with either cocoa powder or pistachios.
