Blanc de Noirs, Wiston, Sussex 2018, 75cl

Made from 100% Pinot Noir, this English sparkling wine is produced by the Goring family at Wiston Estate in Sussex. The vineyard, established in 2006 on a chalk escarpment in the South Downs, benefits from excellent drainage, airflow, and proximity to the coast - ideal conditions for Pinot Noir and Chardonnay. The 2018 vintage is regarded as one of the best in recent memory for English wine.

Whole bunches were gently pressed to preserve purity of fruit, and the juice was fermented in mature French oak barrels. After nine months on lees in barrel, the wine was aged for a further four to five years in bottle before disgorgement. It shows flavours of baked pear, greengage and toasted almond, with notes of vanilla and buttery pastry. A wine with depth and savoury complexity, well-suited to rich seafood, roasted vegetables, or simply enjoyed as a special glass on its own.
