In 1818, Nicolas Francois Billecart inherited the property in Mareuil, which he combined with his wife's vineyard to found the company Champagne Billecart-Salmon. In the early 1950's, Jean Roland Billecart completely rebuilt the cuverie, experimenting with a new system of slow, cool vinification. Novel in those days, it has helped to create the distinct style of finesse and refinement for which Billecart salmon is recognised today.
