Thymiopoulos Naoussa Jeunes Vignes, Xinomavro, 75cl

From the slopes of Mount Vermio in northern Greece, Apostolos Thymiopoulos crafts biodynamic wines that blend innovation with tradition. This expression of Naoussa is made from younger Xinomavro vines, offering a fresher, more accessible take on the region’s noble red. Bursting with red cherry, rose petal, and sun-dried tomato on the nose, the palate is lively and layered with raspberry, gentle spice, and earthy depth. Light-bodied but complex, it delivers silky tannins and bright acidity that make it a pleasure to drink now, while still holding ageing potential.

Pair with grilled lamb chops, tomato-based pastas, and Mediterranean mezze. It’s equally at home alongside roasted vegetables and hard cheeses like Manchego or Kefalotyri.
