Fortnum's Truffle Mac & Cheese
The perfect midweek supper, this recipe adds a little oomph to this classic dish by using our Truffle Cheddar. This serves four, but let's be honest, you'll most definitely be wanting seconds, or thirds...
Ingredients
Serves 4
350g macaroni
3 tbsp butter
3 tbsp plain flour
400ml whole milk
150ml double cream
300g Fortnum’s Truffled Cheddar, grated (truffle lovers can always add more!)
50g panko bread crumbs
Salt and freshly ground black pepper

Boil the pasta in salted water until al dente. Drain well and rinse under cold running water.

Melt 2 tbsp of the butter in a large saucepan, then stir in the flour to make a paste. Cook, stirring, for a couple of minutes.

Gradually whisk in the milk, a bit at a time, until it becomes a smooth sauce. Simmer for a few minutes, stirring, until thickened. Add the cream and stir.

Mix in 225g of the cheddar. Take off the heat and season to taste. Preheat the grill to high.

Tip the drained pasta into the sauce and mix. Pour into a large, greased, ovenproof dish.

Top with the breadcrumbs and the remaining cheddar, then dot with the remaining butter.

Place under the grill for 8-10 minutes, or until the top is golden brown and bubbling.
