New Potato Salad with Chives, Mustard & Red Ale Mayo Recipe by Sam Cooper

Ingredients
Serves 5
300g new potatoes
A small bunch of chives
3 - 4 tbsp Fortnum's Mustard & Red Ale Mayonnaise
1 tbsp salt
How to Make
STEP 1
Clean and prepare the new potatoes, halving larger ones so they’re all the same size.
STEP 2
Add the to a saucepan with salted cold water and bring to the boil, then reduce to a simmer and cover with a lid.
STEP 3
Simmer for 8-10 minutes, then strain and let them steam for 10 minutes before adding them back to the pan with a small amount of olive oil to prevent them from going dry.
STEP 4
Once cold, mix them with mayo and fresh, chopped chives.
