Elderflower and Alpine Strawberry Infusion Recipe by Sam Cooper
This fully forgable summertime infusion is utterly refreshing. As the season progresses, alternative flavours appear that all make delicious infusions, such as rose, borage, verbena, mint, oxalis (in small amounts), and lemon balm.

Ingredients
Serves 5
1 - 2 crowns of elderflower
5 - 10 Alpine Strawberries
300ml Water
How to Make
STEP 1
Harvest the elderflower and give them a shake to remove insects. Cut the flowers from the stems into a jug and add a handful of cut or lightly crushed alpine strawberries.
STEP 2
Top up with fresh, cold water, and place the lid on. Leave somewhere cool to infuse for 20-30 minutes and enjoy.
