Puff Pastry Tree recipe
A very (merry) festive addition to your seasonal spread, this tangy and flavourful Puff Pastry Tree is made with Fortnum’s Somerset Reserve Cheddar and Caramelised Onion and Rosemary Chutney.

Ingredients
Serves 6-8
2 sheets puff pastry
75g Fortnum’s Somerset Reserve Cheddar, grated
1 egg, beaten
Poppy or Nigella seeds to garnish (optional)
How to Cook
STEP 1
Preheat your oven to 220°C/200°CFan/Gas7. Line a large baking sheet with parchment paper.
STEP 2
Unroll 1 puff pastry sheet on to the baking sheet. Cut away 2 strips at the bottom of the sheet to make a “tree trunk”, then cut diagonally to the top of the puff pastry sheet to create a long triangular shape, removing excess pastry on either side.
STEP 3
Spread a thin layer of the chutney over the pastry, all the way to the sides. Sprinkle over the grated cheddar.
STEP 4
Unwrap the second puff pastry sheet and place at the tip of the triangle. Unroll carefully towards the bottom, then press down lightly. Carefully cut away the sides to match the first triangle and remove any excess pastry.
STEP 5
Cut 5cm thick “branches” into the sides of the triangle from both sides, leaving a space lengthwise in the center all the way from the trunk to the tip of the tree. Twist each of the branches clockwise, trying to get in 2 turns on the lower branches. Continue moving up the tree, twisting away from you as you go.
STEP 6
Brush the pastry with beaten egg, then sprinkle all over with poppy or nigella seeds, if using. Bake until golden brown, about 18-20 minutes, allowing to cool on the baking sheet slightly before serving.
