Mocha Brownies with Fortnum’s Colombia El Jordan Estate Ground Coffee
Rich, indulgent and unapologetically chocolatey with a delicious twist for the coffee lovers in the form of our Colombia El Jordan Estate Ground Coffee, this recipe is the perfect sweet treat.

Ingredients
125g unsalted butter
225g Fortnum’s Breakfast in Bogotá Chocolate, chopped
1 tbsp sunflower oil
1 tsp vanilla extract
200g caster sugar
100g light brown soft sugar
3 eggs
90g plain flour
50g cocoa
1⁄4 tsp salt
1⁄4 tsp baking powder
150mls strong hot coffee, made with Fortnum’s Colombia El Jordan Estate Ground Coffee
How to Cook
STEP 1
Preheat your oven to 180C/Fan 160C/Gas 4. Grease and line a 20 x 30 cm rectangular tin, or a similar size square tin. Melt the butter and 175g of the chocolate over a bain marie, stirring until smooth. Transfer to a large mixing bowl.
STEP 2
Stir through the oil and vanilla extract. Add both types of sugar and mix to combine.
STEP 3
Add the eggs one at a time, stirring until smooth.
STEP 4
Stir through the flour, cocoa, salt and baking powder. Lastly, mix in the coffee.
STEP 5
Spread the mixture evenly into the tin and top with the remaining chopped chocolate. Bake for 20-25 minutes, making sure not to overbake or your brownies will be dry.
STEP 6
Remove from the oven and allow to cool completely in the tin, then cut into squares to serve. Tip: these are most delicious and fudgy if you allow them to rest overnight before cutting them.
