The Perigord – also known as Black Winter Truffles Melanosporum – is considered to be one of the finest and most desirable of black truffles. Produced in Italy, these truffles take their name ‘Il Tartufo Nero de Norcia’ from the small hilltop town in central Umbria famous for its surrounding truffle groves.
Preserved in their own juices, these exquisite truffles have a unique flavour best enjoyed when finely sliced and lightly sautéed in a truffle oil or butter. They’re even perfect for adding to sauces, pasta dishes or risottos to create a truly memorable dish.
