All Butter Jam Tarts Recipe
Your tastebuds are in for a treat with these. These jam tarts combine a buttery pastry crust with a sweet and tangy fruit filling, creating a delight that’s perfect for any occasion.

Ingredients
Makes 12
175g plain flour, plus extra for dusting
1 tbsp caster sugar
85g very cold butter, cut into small cube
1 egg yolk
125g of Fortnum’s Preserves such as Raspberry, Strawberry, Blackcurrant or Apricot
How to Cook
STEP 1
Place the flour and butter in a large bowl and rub together until the mixture resembles fine breadcrumbs, then stir in the sugar.
STEP 2
Beat the egg yolk with 2 tbsp coldwater. Pour the mixture into a bowl. Stir it with a knife, then bring the dough together with your hands, ensuring you don’t overwork the dough. Cover and chill for 30 minutes.
STEP 3
Preheat your oven to 200 ̊C/180 ̊C Fan/Gas 6. Lightly dust your work surface with flour and roll out your pastry until it is approximately the thickness of a pound coin. Use an 8cm pastry cutter to cut out 12 pastry discs.
STEP 4
If desired, use a heart or star-shaped cutter to cut 12 shapes out of the remaining dough, to use as decoration on top of the tarts.
STEP 5
Place the pastry discs in a12-hole fairy cake tin. Spoon 1-2tsp of your chosen jam into each tart, topping with an extra piece of pastry if using.
STEP 6
Bake for 12-15 mins, rotating the tin halfway through baking, until the pastry is golden and the jam is bubbling. Allow to cool for a few minutes before carefully transferring them to a cooling rack to cool completely.
