Taittinger remains one of the few Champagne Houses to remain owned and actively managed by the family. The hallmark of the Taittinger Champagnes is the high percentage of Chardonnay which lends the style to one of elegance, delicacy and finesse. Made entirely from cuvée (first pressing), the blend comprises 50% Chardonnay from the Côte des Blancs (Avize, Le Mesnil sur Oger) and 50% Pinot Noir from the Montagne de Reims area (Bouzy, Ambonnay) - obtaining the finesse and structure a great champagne requires. Outstanding when offered with hand-cut, lightly cured Smoked Salmon Fillet.
