I Pastini was started in 1996 by Gianni Carparelli in the Itria Valley – the famous ‘Valley of the Trulli’ in Italy’s Puglian stiletto heel. Today he works 12 hectares of native Puglian varieties. Matching traditional varieties and modern technology makes this one of the region’s most innovative producers.

Made from 100% Primitivo, the wine has a purple colour and the nose of full and ripe bullace plums, damsons and white pepper spice. The palate is full yet well-structured with soft, slightly smoky tannins and a refreshing acidity. Blackberries, sweet black cherries and cinnamon fill the long and satisfying finish that perfectly pairs with the Puglian speciality Maccheroni al Forno – a combination of boiled eggs, meatballs and all manner of other ingredients.
