Product description
Made using the thighs of heavy Italian pigs, each thigh is salted by hand and left for three weeks and then dried for three months. They are cured in the sea air, allowing the balmy, pine aroma of the Apennine woodlands to seep in over nine months.

They are then left in the cellar for 12 months, after which the consortium will affix the Ducal Crown, attesting to their quality. Finally, the ham is kept in place for 18-20 months, resulting in a sweetness that is intense, profound and modulated, but never sugary.
