Bonito tuna is a pale pink-white tuna, with a delightfully delicate flavour that is best eaten simply, in a salad or on toast. It is fished from the Cantabrian Sea by both pole and line, using live bait, then cut, filleted and packed by hand. These techniques have been perfected over more than 100 years and five generations. They continue to use artisan methods of preparation, and aim to preserve the art of fishing and the origin and freshness of this delicious fish. It’s tasty enough to fall hook, line and sinker.
