Handpicked from 20 hectares of olive grove in Moncarapacho, the olives are transported immeditately to the winery where they are milled with granite grifts in a merchanical process dating back to Roman times. The oil is extracted, filtered and stored in stainless steel vats and bottled, using the latest technology.
