San Patirignano's Pannettone is prepared to the recipe of their master using only the finest ingredients. The process all starts with the mother's yeast - a key ingredient for a light and fragrant product - which has been looked after and worked for 11 years by the community bakers.
Its structure is the result of three consecutive days of preparation and nourishment on the mother's yeast with a double leavening of 24 hours.
