Intense and sweet, this Parma ham is made from heavy Italian pig thighs that have been salted by hand and left in a humidified and refrigerated cell over three weeks, and then dried over three months.

The ham is seasoned and hung in the sea breeze where it absorbs the balmy scent from the Apennine woodlands. It is left here for nine months before resting in a cellar for 12 months.

Finally, the ham will be kept in place for 18-20 months, allowing its profound, modulated taste and aroma to fully reveal itself.
