Pittnauer has a puristic approach to winemaking, using natural yeasts, avoiding chemicals, following biodynamic winemaking principles. His modern winery is in the middle of his vineyards to enable the freshest conditions.
Pinot noir is one of the great translators of terroir and Pittnauer is located in East Austria near the Hungarian border with flat, sandy and windy conditions. It is a terroir where the tender and vivid delicacy of the fruit gets all the glory. Thus, fermentation does not take place in wooden fermentation casks but in stainless steel tanks, with reductive and short maturation, to retain this freshness. This elegant wine shows ripe strawberries within a tender but crucial spiciness.
This is one of the few red wines which goes perfectly well with fish because it combines substance with drinkability and levity with depth.
