Starting from the very best single source, welfare accredited raw fish, this salmon has been produced by hand at every stage. From the careful selection of premium, firm graded fish to the hand filleting & hand salting.
Each fillet is lightly salted with a sugar & salt combination, lightly brushed with mustard & coated generously with freshly chopped dill and left to seep and marinade for a minimum of 24hrs.
