This wine is only made in exceptional years from select fruit. All the wines undergo malolactic fermentation providing a dairy richness. The blend tends to favour Pinot Noir with around one third Chardonnay. The wine is aged for five years on the lees and designed for extended bottle ageing. It shows ripe peaches, honey, toast, almonds and candied ginger on the nose. The palate is full-bodied and displays ripe fruits with biscuit, hazelnut, honey and cream characteristics. The finish is long. This is a magnificent champagne to drink now or store carefully for a special occasion.
