Fortnum’s aged balsamic vinegar is made by La Vecchia Dispensa, a 100-year-old family business in Castelvetro di Modena. Its batteria – stack of barrels - was laid down three generations ago and its production is still small-scale, using locally sourced products, including the wood for the barrels. The result is a classic balsamic, beautifully aged and rich with a complex flavour. The vinegar develops, through the passing seasons, as an ancient alchemy turns the contents into a deep, dark, liquid gold. This vinegar can be used in salad dressings, drizzled over cooked meat, sprinkled into risottos or over vanilla ice cream, or even drunk as a digestif – with a fresh strawberry to finish.
