Oil

Fortnum & Mason oils are all from single estates in Tuscany and Sicily. The Tuscan tend towards complex, green, herbivorous flavours with a soft finish: use them to carry other flavours while the oil itself hides in the wings. The Sicilian has subtle, clean, grassy flavours with a peppery finish and enjoys being centre-stage.

Proper Balsamic Vinegar is so good it can be drunk by the spoonful: in cooking, use sparingly. It should only be added to heated ingredients - never cooked itself.
